Today is a Malibu Collider Mocktail
Ingredients: 250ml coconut water, 250ml soda water, 500ml of water, 10 chunks of fresh pineapple.
Method: Place the pineapple chunks, add the coconut water and top up with soda water/water.
Health Benefits: Detoxifying/Hydrating/Replenishing
Notes: If alcohol is desired, mix with Malibu or white rum. This mocktail will get people second guessing if it does include some Malibu, but it definitely does not. For a take on Pina Colada, swap the coconut water for coconut milk. Absolutely gorgeous mocktail, tastes rich and luxurious, but is light and refreshing, A real pick-me-up for midweek!
Serving Notes: Typically served in a highball or cocktail glass. To be transported to the Caribbean, leave to infuse and pour into chilled glasses, with crushed ice. Add pineapple to the side of the glass, a slice of lime and a sprig of mint.
