What do you do to use up lots of organic mushrooms? Well I made a sort of veggie curry in my Instant Pot....that's what. Though I forgot the ginger..oops.
Mushroom & Veggie Red Lentil Curry
olive oil for saute of veggies
3/4 lb organic baby bella mushrooms, sliced
1 medium Vidalia onion, chopped
1 large red bell pepper, chopped
2 stalks of celery, sliced
1 large jalapeno pepper, minced
5 to 6 cloves of garlic, minced
1 tsp or more Penzeys now curry powder
1/4 tsp Penzeys crushed red pepper
1/2 tsp cumin powder
1 tsp chili powder
1/2 tsp Penzeys garam masala
2 organic carrots, peeled and chopped
1 cup red lentils, rinsed
1 small can (14 oz) organic diced tomatoes
1 tsp organic veggie Better than Bouillon, optional
4 1/2 cups water
Saute mushrooms till tender and remove from Instant Pot.
Add spices giving a quick stir...add a splash of water so it doesn't burn and then add the onions, red peppers, celery and cook till almost tender.
Add jalapeno and garlic cooking another minute.
Add the rest of the ingredients including cooked mushrooms and stir.
Set Instant Pot to 10 mins manual and do a natural pressure release.
I served with a drizzle of light canned coconut milk, spoon of cooked chickpeas, and dash of dried chives.
